Cuernavaca, Morelos , Mexico
Had to have my fix of a Gringo Christmas Dinner so I bought a 6 lb. full turkey breast with bone it. Oven roasted it at high temperature. Don't know exactly what the oven temperature was because the oven is old and in bad shape. Need to get a new stove/oven but too lazy to go out and find what I want. I want a commercial stove but it is a major hassle to get in into the kitchen and get it installed. But I do have a meat/poultry thermometer. So, I oven roasted it at a very high temp and it got all nice and golden and the skin crispy and when the thermometer hit 160 degrees Fahrenheit I took it out. Along with the turkey we are having mashed potatoes with turkey gravy, Kay Sinclair's oven baked stuffing , fresh peas and cranberry sauce. For dessert I am doing pears cooked in a little red wine and piloncillo (Mexican raw sugar) and maybe a little vanilla ice cream.
My friend of 40 years, Steven Burrell , is arriving tomorrow, Friday the 26th from Portland, Oregon. If he can get out. The snow and ice storms have been fierce the last 10 days in the northwestern part of the USA. Then on Saturday we are off to the house north of Acapulco to spend about 9 days. 90 degrees Fahrenheit on the beach. The house is right on the beach with a beautiful pool and palapa. Great place. My dog, La Guera , lives at the house. Our caretakers live on the property and take care of our guests ( and us) very well. Alma, our housekeeper is also a wonderful, wonderful cook. She loves to grill things over wood on the beach. We are going to be having leg of lamb marinated in fresh squeezed pomegranate juice, olive oil and rosemary. It is a Juan Diego Michel recipe from his family's ranch in Jalisco. When it is cooked it is cut up (in chunks) and served with fresh hot tortillas and hot red salsa. Along with an ice cold beer or very cold white wine; well it is paradise.

MERRY CHRISTMAS TO ALL
We had a lovely dinner last night here in Cuernavaca in the patio of Joquin's mother Dona Maria Zagal Dominguez. About 25 people. All family. Delicious food and fun. She served a kind of Chicken Kiev mexican style with a wonderful sauce of tomatillos roasted over an open fire and pureed and mixed with crema mexicana and a little chicken stock. delicious.
